Known as curry leaf trees or as Murraya Koenigii, kadipatta plants are beautiful and ubiquitous additions to many South Asian and diasporic homes. They're often considered the most essential herb and houseplant for any South Asian kitchen. The leaves cannot and should not be substituted in classic South Asian dishes. The fresh leaves (never frozen or dried) are tempered in hot oil along with other spices like mustard and cumin seeds, and the hot oil is then poured on top of countless dishes like daal and saag paneer. Since the leaves impart such a unique flavor, I like to add it to homemade chili crisps and fried eggs as well.
This plant has been notoriously difficult to grow in our temperate climate. After nearly four years of growing these trees on a commercial scale, I have finally figured out the secret to getting them to thrive: It’s all in the SOIL.
